So, I had a bottle of way too sweet cucumber limeade and didn’t know what to do with it, when suddenly I had an idea! How about combine it with my favorite pie combination! Lime, avocado, and coconut. And everyone knows cucumber fits right in with that flavor profile. Then I thought, why not add some mint to freshen it up even more? That’s how this cake came to be. And it was good 🙂

Crust

  • almonds
  • dates
  • lime zest
  • salt

Filling

  • coconut cream
  • avocado
  • coconut oil
  • “Texas mADE” cucumber limeade

 

  • mint extract
  • grass fed gelatin (or agar agar for vegan)

Topping

  • fresh mint
  • organic cucumber

This is a dessert I made up, and it’s definitely one of the healthiest desserts you could eat. And you can’t even taste the spinach or avocado since mint and chocolate are such strong flavors! Definitely breakfast worthy, though it doesn’t taste like it. It’s so rich and creamy just finishing one goblet as shown here is satisfying.

  • full fat canned coconut milk
  • frozen spinach
  • avocado
  • soaked cashew (or extra avocado)
  • xylitol
  • cocoa powder
  • peppermint extract
  • fresh mint leaves
  • salt

Pomegranate Lime Pistachio Cake

Pomegranate Lime Pistachio Cake

This was AMAZING!!! That’s all I can say. This was made for my mom’s birthday, that’s why there’s a candle. The rose on top is also edible, although of course we didn’t eat it. It’s made of powdered sugar, water, and xanthan gum. My Korean friend made it. Apparently making intricate flowers that look and feel like they’re made of glass is how they decorate cakes in Korea. Look it up, you’ll be amazed.

Berry Coconut-Almond Cookie Bars

These are, as my mom calls them, “rich and sinfully good!” I got many compliments from others who tried these. They’re are out of this world when served with vanilla ice cream (of the dairy free variety).
